FOOD GLOSSARY
Brown Basmati Rice - An unhulled long-grain Indian rice with
a delicious nutty flavour.
Miso - A fermented soybean paste popularly used in Japanese
cooking. Miso, pungent and salty, can also be made with barley or brown
rice.
Soba Noodles - Japanese noodles made from buckwheat flour with
a delicate nut-like flavour. Rich in B vitamins. Soba noodles are a
popular alternative for people with wheat allergies.
Spelt - A relative of wheat, spelt is considered one of the
original ancient grains farmed in the Middle East, more than 9,000 years
ago. It is higher in protein, fat and fibre than most varieties of wheat.
Suitable for people with wheat sensitivities.
Tahini - A thick paste or butter made from ground up sesame
seeds, used as a base for sauces and dressings. Popular in Middle Eastern
cooking.
Tamari - A naturally fermented soy sauce made without chemicals
or preservatives.
Tempeh - A fermented high protein product, traditionally used
in Indonesia, made from whole soybeans with a nutty flavour and meaty
texture.
Nori - A delicate sea vegetable dried and pressed flat into
thin paper sheets and toasted.
Tofu - A soybean curd made from soy milk. It has a custardlike
texture that easily absorbs the flavours of other foods. An excellent
source of vegetable protein.
Wasabi - Also known as Japanese horseradish. A spicy paste made
from the green root of a plant ground into a fine powder.
Vegan - An animal-free choice of food or diet that excludes
all meat, fish, fowl, dairy or eggs. Includes an infinite variety of
fruits, vegetables, legumes, grains, nuts, seeds, herbs and spices.
